Alpine Meats and Deli
Oma's Herring Salad

Ingredients:
- 6 Medium Potatoes, Cooked and sliced into ¼” slices, then quartered
- 4-5 Eggs Hard cooked and coarsely chopped
- 1 Jar or more of pickled beets, Medium dice, including onions. Reserve juice
- 1 Jar Capers
- 5 Stalks Celery, Finely diced
- 1 Cup + - chopped walnuts
- 3 Apples. Granny Smith or Mc Intosch, Sliced & Diced
- 1 Small onion, Finely diced
- 4 Medium Pickles, Finely diced
- 1 Qt. Jar Herring in Wine sauce, Diced, including half of the onions. Reserve Juice
- 1 Lb. (Approx) Ham. Cut into ¼ “ cubes. (Approx.)
- Mayonnaise
- Sour Cream
- Salt
- Pepper
Procedure:
- In a large bowl, combine all ingredients except eggs, and adjust the beet juice until the mix is a light pink color. Salt and pepper to taste, and add the chopped eggs last, to avoid breaking them up too much.
- Add the herring juice for flavor.
- Add Mayonnaise and sour cream until the mix is rich and flavorful.
- Salad will keep, refrigerated for up to 1 week.

Spätzle

Ingredients:
- One cup of flour
- 3 large brown eggs
- 1/2 teaspoon of salt
- 1 cup plain bread crumbs
Procedure:
- In a large mixing bowl, mix all the ingredients together until you've got a very
thick paste.
- Bring 3 quarts of water to a full boil, place the Spätzle mix on a
cutting board and cut off small thin strips into the water. Reduce to medium-high
heat and allow to cook for 15 minutes.
- Take the cup of bread crumbs and place in a
frying pan over medium heat and cook until they are slightly toasted. Drain the
Spätzle, allow 1 teaspoon of butter to melt over them and then mix in the bread
crumbs.
- They are now ready to eat, but if you want a REAL treat, leave in
refrigerator for several hours then re-fry!
Potato Pancakes (breakfast)

Ingredients:
- 4 potatoes
- 2 eggs
- 1 tsp salt
- 1/2 tsp baking soda
- 1 onion
- 1/4 tsp pepper
- butter, as needed
Procedure:
- Wash and peel potatoes. Drop into cold water and let stand for 1-2 hours.
- Grate potatoes finely and press out excess moisture.
- Peel and grate onions and potatoes.
- Add eggs, seasonings and baking soda. Mix well.
- Heat butter in skillet. Add 1 T of mixture for each pancake. Do not make them thick.
- Cook until golden brown, then turn.
Lebkuchen (dessert)

Ingredients:
- 1 cup honey
- 1 cup brown sugar
- 2 eggs
- 4 1/2 cups flour
- 1 cup slivered almonds
- 1 cup diced mixed candied fruits and peels
- 1/2 cup soft butter
- 1 tsp baking powder
- 1 tsp nutmeg
- 1 tsp cinnamon
- whole blanched almonds
Procedure:
- In saucepan, warm honey and sugar over low heat; stir until dissolved. Remove and cool.
- Stir together flour, cinnamon, powder, and nutmeg; set aside.
- Put honye mix in large bowl; beat eggs and butter into honey.
- Add fruits, peels, and slivered almonds. Beat on low until combined. Add flour mix; beat until dough is smooth. Cover and refrigerate overnight.
- On lightly floured surface, roll 1/2 of dough at a time to 1/8 - 1/4" thickness. Cut into 1 - 1/2" diamonds with knife. Press whole almond in center of diamond (or use cookie cutter).
- Arrange on lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Cool on wire rack; store airtight. To soften, store with quartered apple.
Bauernkuchen (carrot cake - dessert)

Ingredients:
- 1 - 1/2 cups corn oil
- 2 cups sugar
- 3 eggs
- 2 cups flour
- 2 tsp cinnamon
- 2 tsp baking soda
- 2 tsp vanilla extract
- 1 tsp salt
- 2 cups shredded carrots
- 1 cup chopped nuts
- 1/2 cup crushed pineapple
Procedure:
- Combine all ingredients in large bowl and mix well.
- In 9x13 buttered pan, bake for 1 hour at 35o degrees
- Cream Cheese Icing: 3 oz. cream cheese, 1 -1/4 cup powdered sugar, 1 stick margarine, 1/8 cup crushed pinapple, 1/4 cup chopped walnuts
- mix in pineapple and nuts last.
Bavarian Apple Torte

Ingredients:
- 3/4 cup margarine
- 1/2 cup sugar
- 1/2 tsp vanilla
- 1 - 1/2 cups flour
- ---------------------------
- 2 packages cream cheese
- 1/4 cup sugar
- 2 eggs
- 3/4 tsp vanilla
- ---------------------------
- 1/2 cup sugar
- 3 cups apples, sliced thin
- 1 tsp cinnamon
Procedure:
- Combine first four ingredients for crust and press into bottom of ungreased 9" spring pan
- In mixing bowl, beat cream cheese and sugar; add eggs and vanilla, mixing well, then pour over crust.
- Combine last three ingredients and spoon over filling. Place pan on a foil-lined baking sheet to prevent drips.
- Bake 350 degrees for 55 to 60 minutes or until center is set and apples are
tender. Cool completely on wire rack before releasing sides of pan. Store in
fridge.
Home Fries

Ingredients:
- Potatoes - 6 larger, new red
- Onion - half of a large white
- Butter - just under a quarter of a pound
- Salt - to taste
- Pepper - to taste
Procedure:
- Cut the potatoes into cubes slightly larger than playing dice; boil until almost done
- Dice the onions to pieces the size of dimes and sauté with butter
- Peel and dice the potatos while still slightly warm; dice the eggs after cooling
- Add the drained, but still hot, potatoes to the onions in sauté pan over medium-high heat
- Gently move the home fries while adding the rest of the butter; salt and pepper to taste
- Cook until slightly browned and serve

Thousand Island Potato Salad

Ingredients:
- New Red Potatos - approximately 8
- Onion - half of a large, white onion
- Eggs - 4
- Celery - three stalks
- Mayonnaise - 1/2 cup
- Thousand Island Dressing - 1/8 cup
- Salt and Pepper - to taste
Procedure:
- Boil potatos, uncut and unpeeled, until done
- Hard boil the eggs; (put eggs into water, bring to a boil, then allow to simmer for 10 minutes)
- Peel and dice the potatos while still slightly warm; dice the eggs after cooling
- Dice up the celery and onion; add to the potatos along with the eggs
- Add salt and pepper, mayonnaise and thousand island dressing; mix well
- -(If too dry, add more mayonnaise)
- Allow to cool before serving
